The history of La Oliva is fascinating. It was established over 28 years ago by Rene and Ursula Salle. The couple, originally from France and Germany, were instantly captivated by Dalt Vila's charm and decided to set up their gastronomic venture there.
Over the years, their daughter, Lisa, who grew up playing in the vicinity of the restaurant, took over the reins of the establishment, ushering in a new era while preserving the rich legacy of La Oliva.
